People with Celiac and others following gluten-free diets have limited options when it comes to dining out and traveling, and they are always on a quest to discover new places to safely dine. Celiac Disease is an autoimmune disorder that compromises the body’s ability to digest gluten, a protein found in wheat, rye and barley. Those foods can flatten the villi in the intestines and prevent the proper absorption of food and nutrients, leading to serious health consequences. According to a 2003 study led by the University of Maryland Center for Celiac Research in Baltimore, Celiac Disease may affect as many as 1 in 133 people in the United States. Unlike an allergy, a person does not outgrow Celiac Disease and must follow a strict gluten-free diet for life in order to maintain their health.

Alessio Fasano, M.D., the study’s principal investigator and professor of pediatrics, medicine and physiology at the University of Maryland School of Medicine says, “While the gluten free diet is the cornerstone for an effective and successful treatment of Celiac Disease, its implementation can be challenging, particularly in situations like traveling or dining out, in which patients need to rely on third parties for accurate compliance.”
