Serves: 8 ounces
 
An energizing way to start your day!
Ingredients
  • ½ grapefruit, peeled and seeded
  • 1 carrot
  • 1 cucumber
  • ¼ head Bibb or Romaine lettuce
  • 1 large handful of fresh mint leaves and stems
  • 1 inch piece of fresh ginger
  • 2 inch piece of fresh turmeric, or 1 teaspoon powdered
  • ½ lemon with peel
Instructions
  1. Clean the fruits and vegetables.
  2. Process all the ingredients (except powdered turmeric) through a juicer. Stir powdered turmeric in, if using.
  3. Drink immediately for maximum nutritional benefits.

Grapefruit Slaw
Serves: 4 servings
 
This tangy slaw is a great accompaniment to chicken and fish.
Ingredients
  • 3 cups thinly sliced Napa cabbage
  • 2 pink grapefruit, peeled and segmented, 1 tablespoon of juice reserved
  • 1 celery stalk, thinly sliced on the diagonal (approx. ½ cup)
  • ¼ cup coarsely grated carrot
  • ¼ cup diced red radish
  • 1½ tablespoons umeboshi plum vinegar
  • ½ teaspoon finely grated lime zest
  • 1½ teaspoons freshly squeezed lime juice
  • 2 tablespoons toasted pumpkin seeds
  • 1 tablespoon coarsely chopped flat leaf parsley
  • sea salt to taste
Instructions
  1. Mix together the cabbage, grapefruit, celery, carrot, and radish in a medium-sized bowl.
  2. Whisk together the reserved grapefruit juice, plum vinegar, lime zest, and lime juice in a small bowl.
  3. Toss the slaw with the dressing. Sprinkle with the pumpkin seeds, parsley, and salt to taste.
