Super Recipes for Super Bowl Sunday

Come on over to my house this Super Bowl Sunday!

I’m serving all the “traditional” game-day favorites with a healthy Fat Flush twist, of course. My taste-tested menu has minimal prep time, so most of the recipes can be prepared ahead.

I know you will make your guests cheer as they savor the mouth-watering menu, kick back, and enjoy the game and camaraderie.

BBQ Chicken
This BBQ chicken recipe is my personal version of those yummy buffalo wings. Baked and coated with a delicious sauce, flavor is not sacrificed. They are simply finger-lickin’ good.

Ingredients:

2 teaspoons extra-virgin olive oil

1/4 cup almonds, blanched

4 skinless chicken breasts with bones

1 8-ounce can crushed tomatoes

3 tablespoons tomato paste

1/2 cup fresh orange juice

2 tablespoons apple cider vinegar

1/2 teaspoon low-sodium Worcestershire sauce

2 tablespoons honey mustard

Salt and pepper to taste

Directions:
Preheat oven to 350°F and coat a Pyrex pan with oil. Chop almonds in a food processor until consistency of flour. Dip chicken breasts into nut flour and coat. Place chicken in a Pyrex pan. In a medium saucepan, heat tomatoes, tomato paste, orange juice, apple cider vinegar, Worcestershire sauce, honey mustard, salt and pepper.  Bring to a boil for 1 minute, then lower heat and simmer until sauce thickens, about 5 minutes.  Pour sauce over chicken breasts. Cover and bake for 20 minutes. Remove cover and let chicken brown for another 15-20 minutes. Serve immediately.

Serves 4

 

Shrimp Puffies
They may seem decadent, but watch these healthy bite-size morsels move faster than a quarterback under pressure!

Ingredients:

2 egg whites

4 tablespoons Spectrum Naturals organic mayonnaise

2 teaspoon garlic powder

1 cup shrimp, cooked and finely chopped

20  large daikon radish rounds

Directions:
Preheat broiler. In a small bowl, beat egg white until soft peaks form. In another bowl, mix mayonnaise, garlic powder, and shrimp. Fold shrimp mixture into egg white. Place spoonfuls on daikon rounds. Spray nonstick baking sheet with nonstick cooking spray. Broil until golden.

Substitute any type of seafood for the shrimp. Lobster, scallops, and crab make good puffies too!

Serves 4

 

Ranch Style Cottage Cheese Dip
Impress your football fans when this dip hits the table! Delicious, easy to assemble and packed with dairy calcium. Veggies have never had it this good!

Ingredients:

1 cup low-fat cottage cheese

3 tablespoons fresh lemon juice

1 tablespoon onions, chopped

2 teaspoons fresh parsley, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Directions:
Blend all ingredients in blender until smooth. Chill at least 1 hour before serving. For an extra kick, try adding 1 jalapeño and ¼ cup cilantro.

Yields 1 ¼ cups

 

Zesty Avocado Dip
A vegetarian source of protein and potassium, this avocado recipe is also a heart-smart source of monounsaturated omega-9 fatty acids. It’s the MVP of the dip-table in this zesty veggie dip!

Ingredients:

1 small ripe avocado, peeled, pitted, and mashed

1/4 cup scallions, finely chopped

1/4 cup cilantro, chopped

1 tablespoon lemon juice, freshly squeezed

2 tomatoes, seeded and finely chopped

1/2 teaspoon ground cumin

1/2 teaspoon cayenne

1 tablespoon flaxseed oil

Directions:
Place all ingredients in a large bowl and blend well. Serve with veggies for dipping.

Yields about 1 cup

 

Veggies for Dipping
What’s a good dip without the right kind of “dippers?”  Here are a few suggestions for healthy choices that will make potato and/or corn chips obsolete!

  • Sliced zucchini or yellow squash
  • Cucumber spears
  • Carrots sticks
  • Red, yellow, green, and orange bell peppers cut into strips
  • Cherry or pear tomatoes
  • Celery sticks
  • Endive leaves
  • Jicama slices
