Sweet n’ Savory Cran-Potatoes
– Serves 4
• 5 1/2 cups sweet potatoes, chopped
• 2 cups unsweetened fresh cranberries
• 1 tablespoon organic coconut oil, melted
• ¾ tablespoon organic maple syrup
• 2 teaspoons Ceylon cinnamon
• A dash of Selina’s Celtic Sea Salt
• Flora-Key
In a mixing bowl, combine all ingredients with the exception of the cinnamon, salt and Flora-Key. Once thoroughly mixed, add cinnamon and salt, and stir until evenly combined. Place parchment paper on a cookie sheet, evenly spread mixture, and heat at 400 degrees F for 45 minutes or until a toothpick can easily be poked through the sweet potatoes. Remove and sprinkle with Flora-Key before serving.
