One thing this illness outbreak has really brought home to us all is the importance of our environment in our health – especially indoor air quality. Sneak Peek Recipe – Slow Cooker Meatballs
Just because you’re staying at home, it doesn’t mean you’re not busy. There’s nothing better than a fix-it-and-forget-it slow cooker meal when you have work to do, errands to run, or a house to deep clean. Just throw the ingredients in your Crock Pot in the morning, forget about it, and in the evening you have a fragrant, fully cooked meal the whole family will love. And when I say forget about it – I mean it. Try to resist the urge to lift the lid – there’s no need to stir, and every time you peek inside you need to add another 15-20 minutes to your cooking time.
Slow Cooker Meatballs
Who doesn’t love a good meatball? Serve these with spaghetti squash or just eat them alongside a fresh salad and steamed veggies.
- 1 1/2 pounds ground beef
- 1/4 cup fresh parsley, chopped
- 1 large egg or flax or chia egg (see recipe page 14)
- 3 cloves garlic, minced
- 1/4 cup leek, white and green parts, minced
- 1 teaspoon sea salt
- 1 teaspoon oregano
- 1 teaspoon prepared horseradish
- 1 jar organic marinara sauce
In a large bowl mix together all meatball ingredients (save sauce to pour over last).
Form into 24 meatballs and place in slow cooker.
Pour sauce on top of meatballs. Cook on low setting for 6 hours.
