The Perfect Fall Breakfast

SCRUMPTIOUS APPLE SQUARES

Serves 1 (2 squares) 

Ingredients

  • 2 omega-enriched eggs
  • 1 scoop Body Protein
  • ½ teaspoon ground Ceylon cinnamon
  • ½ teaspoon pure vanilla extract
  • 8–10 drops liquid monk fruit sweetener* (to taste)
  • 1 small apple, cored and thinly sliced
  • Olive oil spray (for the pan)

 Instructions

  1. Preheat oven to 350°F. Lightly coat an 8-inch bread pan with olive oil spray.
  2. Whisk together the eggs, Body Protein, cinnamon, vanilla, and monk fruit in a medium bowl.
  3. Layer the apple slices evenly on the bottom of the prepared pan. Gently pour the egg mixture over the apples.
  4. Bake for 15–20 minutes, or until just set in the center. Let cool slightly.
  5. Cut around the edges to loosen, remove from the pan, and slice into 2 squares. Sprinkle lightly with cinnamon before serving, if desired.
